Ingredients

    3 cups pulp (I like carrot, apple, beet)
    3 tbsp Raw Honey
    1/3 cup King Arthur Gluten Free Flour
    1/3 cup Oat Flour
    2 Eggs
    3 Tbsp Pure Maple Syrup
    1/4 cup Olive Oil
    1/4 cup of the juice
    2 tsp baking soda
    Spices and salt to taste:
    2 Tbsp cinnamon
    1 tsp clove
    1/5 tsp nutmeg
    1/2 tsp allspice
    1 tsp vanilla
    1 tsp salt

Tips

These muffins are incredibly dense and moist - I like to use some of the nuts on top.


Directions

Preheat oven to 380 degrees fahrenheit. Mix all ingredients together and portion into prepared muffin sheet - I spray mine with coconut oil. Bake 35-40 minutes, or until muffins are firm to the touch.

Serving Size: Makes 6-12 muffins
