Introduction

People love a good brunch casserole, especially with company visiting or on Christmas morning. But all that bacon, cheese, and whole egg makes them poor choices for a healthy diet. This recipe uses mostly egg whites, turkey bacon, and low-fat cheese. It looks like a typical brunch casserole and tastes fantastic, but your guests will never realize that at less than 200 calories per serving it's also guilt-free! It does have some fat, but considering that the original has 40+ grams of fat per serving, this is a huge improvement for a special occasion meal. Ingredients

    2 whole eggs
    10 egg whites (1 1/4 cups from a carton)
    4 cups milk (I use 1%)
    2 cups low-fat shredded cheddar cheese
    8 slices turkey bacon, crumbled
    2 cups fresh spinach, torn up

Tips

You can do the whole recipe with just egg whites, but I find that people (like my father-in-law, for example) are reluctant to eat something obviously made of egg whites only because it's "diet food". The two yolks make it yellow enough to fool those anti-diet-food people in your life without adding many calories.

Prep time does not include cooking the turkey bacon, but it does not take long to cook it in a large nonstick pan.

This dish can be prepared in advance and refrigerated overnight, then baked in the morning.


Directions

If desired, spray a large baking dish with cooking spray (not included in recipe calculations).

Beat eggs, egg whites, and milk together in a large mixing bowl. Add 1 cup of the cheese, the turkey bacon, and the spinach and stir.

Pour egg mixture into pan and sprinkle the other cup of cheese on top.

Bake at 350F for 60 minutes or until firm and cooked through.

Serving Size: Makes 12 servings.
