Introduction

We have a large family, so this recipe is huge for most people.:) Don't leave out the Nutmeg, as it give these pancakes a "doughnut" like flavor. So light and fluffy! Ingredients

    4 cups Whole Wheat Flour
    4 cups All purpose Flour
    1 cup Sugar
    4 TBS Baking Powder
    2 TBS Salt
    1/2 tsp Nutmeg
    6 egg yokes
    6 Egg whites, stiffly Beaten
    1 cup butter, melted
    6 cups Milk

Directions

Mix together dry ingredients. In separate bowl mix egg yokes, butter and milk. Add to dry ingredients, mixing together well. Gently fold in egg whites. Fry on hot cast iron griddle, no need to oil pan.

Serving Size: Makes about 40 4" pankes
