Introduction

Delicious granola bars that are much healthier than those processed store-bought ones. Feel free to substitute any dried fruit or nuts, or even to omit the chocolate chips. Ingredients

    - 1/3 cup hard margarine (softened)
    - 1/3 cup peanut butter
    - 1/3 cup packed brown sugar
    - 1 cup honey

    - 4 1/2 cups rolled oats
    - 1 cup whole wheat flour
    - 1/2 teaspoon baking soda
    - 1 teaspoon pure vanilla extract

    - 1 cup dark chocolate chips
    - 1/4 cup dried cherries
    - 1/4 cup chopped pecans

Directions

Preheat the oven to 350 F.

In a large bowl, mix together the margarine, peanut butter, brown sugar and honey.

Add the oats, flour, baking soda and vanilla, and mix well. Add chocolate chips, cherries and pecans.

Mix well, then press mixture into a greased baking dish (glass) using waxed paper.

Bake for 20 minutes, or until edges are golden brown.

Let cool completely in pan before cutting into bars. Store in an airtight container or in individual Ziploc bags.

Makes 28-30 bars. Yum!

NOTES:
** You may soften the margarine in the microwave if needed; it's okay if a little bit melts.

** I use quick oats; I'm unsure what sort of texture the traditional or instant kind would yield.

**I use a 9.5"x13.5" baking dish

**Feel free to substitute other nuts and dried fruit, or even to omit the chocolate chips!

**Sweetened or unsweetened peanut butter will work in this recipe
