Ingredients

    1 c Brown Rice, cooked
    2 Eggs
    1/4 c Spinach, chopped
    1/2 small onion
    Small sprinkle of Shredded Cheese
    Olive Oil
    Salt & Pepper

Tips

Great way to use left over rice for a healthy filling breakfast.

You could also add breakfast meat of choice.


Directions

Drizzle a little olive oil in skillet and lightly saute onions & spinach. Add eggs. When eggs are done and cooked brown rice. cook until warm and sprinkle with desired amount of cheese. (I just use a tiny amount for taste. Salt and pepper as desired).
