Introduction

Ingredients

    4T Smart balance lite
    4T cornstarch
    4C milk (2%)
    1 lb cheddar cheese
    1.5 pounds lean ground beef
    1T cumin
    Dash of cayenne pepper (or to taste)
    38 oz mild picante sauce
    10 oz diced tomatoes
    7 - 8 corn tortillas


Tips

This also tastes great with fresh peppers added in. Beware, however, the longer it cooks the hotter the peppers will become.


Directions

Brown the ground beef. In a medium pot, on med. heat melt the Smart Balance LIte then add the cornstarch and mix well. Add in the milk whisking constantly until the milk boils. Remove from heat, add cheese and stir until melted. Then add in the cumin and cayenne pepper. Cut the tortillas into 6 wedges each. Mix the picante and diced tomates in a bowl. In the slow cooker start layering the ingredients starting with a layer of corn tortilla, then the beef, then the picante, finally layer with cheese sauce. Continue layering until pot is full or you run out of ingredients! Cook on low for 4 hours.
