Our family's spin on a favorite breakfast, French toast. Kinda of Paleo( Not completely) and Gluten FreeWe used coconut milk instead of regular milk, and for the bread we used a favorite recipe for gluten free bread. We used coconut milk instead of regular milk, and for the bread we used a favorite recipe for gluten free bread.

Ingredients

3 Eggs
3 tsp vanilla extract
1 1/2 tsp ground cinnamon
3/4 cup coconut milk
12 slices gluten free bread.
Directions
1. Beat egg, vanilla and cinnamon in shallow dish. Stir in milk.
2. Dip bread in egg mixture, turning to coat both sides evenly.
3. Cook bread slices on lightly greased(we use pure unrefined extra virgin coconut oil) nonstick griddle or skillet on medium heat until browned on both sides.
