Introduction

Ingredients

    Mung beans 1 cup
    Brown rice 1/2 cup
    Fenugreek seeds - 3/4 tsp (optional but recommended)

    Onions chopped (1/4 cup)
    Ginger root (1 tbsp)
    Green chillies (2)
    Cumin seeds (1 tsp)
    Salt (3/4 tsp)

Tips

You may also use dehulled mung beans instead of the green ones and the crepes still turn out delicious. In fact some may prefer the dehulled mung beans.


Directions

Soak Mung beans, rice and fenugreek seeds in water overnight. Before making the crepes grind rice, beans and fenugreek seeds along with onions, chillies, cumin seeds and ginger in a blender until a smooth paste is formed. Pour this batter into a container and add salt. Mix well. Heat a griddle on low medium heat. Grease the griddle and pour 1/4 cup of the batter and spread into thin crepes. After it turns brown flip it put it on a plate. Spread some butter if you wish. This can be served with ginger chutney or tomato pickle which you may find at an Indian grocer.
