Meatloaf:
Kirkland Organic Ground Beef, 1 1/4 lbs.
1/2 Medium Onion Chopped
Egg, fresh, whole, raw, 1 large
Ketchup-Low Sugar, 6 TBSP
Yellow Mustard, 2 tsp or 1 packet
Kraft grated parmesan cheese, 1/4 C
Nature's Own Honey 7 Grain Whole Wheat Bread, 2 slices
Dried Parsley, 1 TBSP
Whole Milk - Vitamin D, 2 TBSP
Ketchup Topping:
Stevia in the Raw, 3 TBSP
Ketchup-Low Sugar, 2 TBSP
Tips
Let sit 5 minutes once the meatloaf has finished cooking to let the juices set in the meat.
When I want to add veggies to this meatloaf I will shred them and microwave them for 30 seconds to a minute prior to adding them to the meatloaf.
Some of the veggies I have added are spinach, carrots, and chopped mushrooms, but add your favorites. Jalapeno could be good too!
Directions
Preheat oven to 350 degrees. Chop onion and microwave 30 seconds. Cube bread. Add these ingredients to the remaining meatloaf ingredients. Shape using a small bundt pan sprayed with non stick cooking spray. Flip shaped meat loaf into a baking dish with sides. Using the bundt pan allows the meatloaf to cook evenly and quicker. Bake in oven for 30 minutes.
Mix topping ingredients. After baking the meat loaf 30 minutes, top with the ketchup topping. Bake for an additional 15 minutes.
