Ingredients

    1.5 Cup brown rice uncooked
    4 C chicken broth
    1 C chopped onion
    1 C chopped celery
    1-2 tsp. minced garlic
    1 tsp salt
    1/2 tsp pepper
    sprinkle of red pepper flakes (optional)
    1 tsp marjoram
    2 C chopped broccoli
    4 oz. 2% milk Velveeta
    1 6 oz. carton of plain 0% Greek Yogurt
    1/2 C skim milk

Tips

Cooking times depend a little on how hot your crock pot is. My new one didn't take that long, but some cook slower and it may take longer.


Directions

Spray a 4 quart slow cooker so rice won't stick. Put in brown rice and chicken broth, celery, onion and spices. Cook on high for 2-3 hours or low for 4-5 hours. If rice is done, add broccoli, cheese, yogurt and milk. Stir well and put lid back on. Cook for 30 minutes more or until cheese is melted and rice is smooth. Put on keep warm setting until ready to serve.

Serving Size: makes at least 8 servings, 1 C each.
