Introduction

This is a light dish that I found on The Food Network sight. I used light butter but it called for unsalted butter. I use I/3 cup of cheese but it called for 1/4 cup. Ingredients

    Ingredients:

    3/4 cup grits quick cooking grits
    3 cups water
    Kosher Salt
    Black Pepper
    1/3 Parmesan Cheese, grated
    5tbsp. butter
    1 lb. large shrimp peeled & deveined, tails intact
    2 cloves Garlic
    juice of 1/2 of lemon
    2tbsp.parsley
    hot sauce (optional)

Directions

Bring 3 cups water to a boil in a medium saucepan over high heat Slowly whisk in the grits, 1 teaspoon salt, 1/2 teaspoon pepper. Reduce the heat to medium low & cook stirring occasionally, until thickened, about 5 mins. Stir in the cheese & 2 tablespoon butter. Remove from heat & cover to keep warm.

Meanwhile, season the shrimp with salt & pepper. Melt the remaining 3 tablespoons butter in a large skillet over medium-high heat. Add the shrimp & garlic & hot sauce if using. Cook tossing continually 3-4 minutes until shrimp is pink. Remove from heat add lemon & 2 tablespoons water. Season with salt & pepper. Spoon grits on large platter & top with shrimp & sauce. Serve with lemon wedges.
