Introduction

Ingredients

- Spinach, fresh, 2 cup
- 11 Eggs
- Yellow Bell Pepper
- Orange Bell Pepper
- 1c Celery
- 1 med yellow onion diced
- Red Onion Raw and diced
- Green Onion diced
- Red pepper
Tips
You can add any veggies! Mushrooms or olives or whatever. I personally do not like mushrooms so that's why they are not in it.
Directions
Pre-heat the oven to 370
In a bowl mix the eggs.
Then cut, chop, dice all the veggies and throw it into the bowl.
Spray the 11x9 pan with coconut oil and pour in stuff from the bowl. Mix it around in the pan to even it out.
Sprinkle red pepper on the top.
Bake for 30-45 minutes depending on oven... Mine finished in 30.
Makes 10 huge portions! Super easy and healthy and done for the week!
