Number of Servings: 3

Ingredients

    eggplant
    tomato
    chopped olives
    Pam
    feta cheese
    High fiber low carb tortilla wraps
    garlic (I use chopped, jarred garlic)
    pasta sauce (any kind)

Directions

Turn on oven to broil. Peel and dice eggplant. Put in Pam-sprayed skillet and saute'. Add sliced tomato, olives, garlic. Continue cooking and when eggplant is almost soft, put in pasta sauce. Stir all well. Place tortillas on baking sheet and put under broiler. Have to watch as they burn quickly. When they're semi-crisp crisp, maybe 45 seconds, take them out, put skillet mixture on top of them. Add the feta cheese and broil for about a minute or when tortilla is crispy. Feta cheese does not melt well, but will be soft when taken out of oven.
