Ingredients

    8 ounces diced cooked turkey breast
    1 tbsp olive oil
    1 cup chopped raw onion
    4 ounces diced mushroom
    1 medium sweet pepper, diced
    4 ounces zucchini, diced
    2 tbsp chopped garlic
    2 tsp chili powder
    2 cups low sodium vegetable broth
    3/4 cup sliced carrots
    1 can Ro-Tel Diced Tomatoes with Habaneros
    1 can Pinto Beans, rinsed
    1 can Muir Glen Organic Fire Roasted Diced tomatoes

Directions

Heat up olive oil in soup pot, add chopped onions, peppers, mushrooms, carrots and garlic. Saute until onions begin to soften (about 10 minutes). Add zucchini, both cans of diced tomatoes, chili powder, and beans. Add vegetable broth. Let simmer for at least an hour uncovered on low heat, adding water as needed. Makes 8 - 1 cup servings.
