Ingredients

    1 & 1/4 C Oats (rolled, not instant)
    1/2 t Baking powder
    1/4 t Salt
    1 t Cinnamon
    1 T Coconut oil, melted
    1 C Coconut milk
    1 Egg
    1 T Maple Syrup
    1 C Mashed super ripe bananas (2 bananas – mash well)


Tips

Muffins will be nearly burned on the edges in order to cook thoroughly.

Substitutes – Oil (any oil or melted butter); coconut milk (any milk); maple syrup (honey, sugar, brown sugar, or leave out).

Use bananas that are so ripe they are almost black, gooey on the inside.

Store in fridge. Heat one muffin for 10 sec in microwave before eating. Great with peanut butter.

Try whirling ALL the oats into a flour if you do not like the oatmeal consistency.


Directions


Preheat oven to 375.

Whirl 3/4 cup of the oats in food processor to make oat flour.

Add baking soda, salt, cinnamon, and the rest of the oats and pulse once or twice just to mix/chop the rest of the oats just a little.

Whisk rest of ingredients together (oil, milk, egg, maple syprup…then add mashed bananas).

Mix dry ingredients with wet. Pour into 12 very well greased muffin tins (or use liners) and bake for 35 min.
