Introduction
A slight change to another crustless quiche I found out here and hubby wanted actual calories of what I made. A slight change to another crustless quiche I found out here and hubby wanted actual calories of what I made.Number of Servings: 6
Ingredients

1/2 medium onion (diced)
2 c. spinach (chopped)
1 T butter
1 c. ham (diced)
1 c. cottage cheese (4% large curd)
2 c. of eggs (~8 eggs)
3/4 c. shredded cheese
1/2 t. salt
1/2 t. pepper
Tips
You can add pretty much any veggies that you'd like, but keep them around 1 c. total.
Directions
Spray 6 ramekins with cooking spray and place on a baking sheet. Saute onions and spinach in the butter. Mix the cottage cheese, eggs and cheese in a bowl. Season with salt and pepper to taste. Put equal amounts of the onion spinach mixture and ham in each ramekin. Pour egg mixture over the top. Give a quick stir. Bake at 375 for approx. 30 min or until eggs are set.
