Ingredients

2 cup, diced Celery, raw,
2 cup, chopped Carrots, raw
2 cup Broccoli raw,
1 cup Cauliflower, raw,
3 Chicken Breast cooked and cubed
1 Block of shredded Cabot Seriously Sharp Cheddar Cheese,
12 cups Chicken stock
4 tbsp. Olive Oil
4 Tbsp. flour
1 tsp minced garlic
1 tsp ground nutmeg
1 cup skim milk
Directions
Throw all vegetables into the crock pot and fill with broth and let cook for 5 hours.
Once vegetables are soft enough to check with no crunch turn down to low heat.
In separate pot add olive oil and heat up then sprinkle flour in and combine till golden. Add milk. you will need to skim some broth off the soup and use to thin out the roux. Approximately 5 cups. once roux is thinned out remove from heat. Add shredded cheese and nut meg and garlic let stand till cheese is melted then add back to pot with vegetables. Cook on low heat for another 1-2 hours. Then add chicken and stir and serve.
