Ingredients

8 oz. uncooked soba (or spaghetti) noodles
nonstick cooking spray
1 1/4 lb. boneless, skinless chicken breast halves, cut into bite-sized pieces
1/3 cut lite teriyaki sauce
2 tablespoons cornstarch
2 teaspoons Chinese five-spice powder
4 green onions, diagonally sliced
2 tablespoons chopped fresh cilantro
Directions
1. Cook noodles as directed on package.
2. Meanwhile, heat a large nonstick skillet or wok over medium-high heat until hot. Spray with Pam and add chicken; cook and stir 3 to 4 minutes or until lightly browned. Add carrot; cook and stir 3 to 4 minutes or until crisp-tender.
3. In medium bowl, combine broth, teriyaki sauce, cornstarch and five-spice powder; blend well. Add to chicken and carrot; mix well. Reduce heat; cover and cook 5 minutes or until chicken is no longer pink and carrot is tender, stirring occasionally.
4. Drain noodles; add to chicken mixture. Cook 2 to 3 minutes or until thoroughly heated. Sprinkle with onions and cilantro.
Makes 6 (1-cup) servings.
