Ingredients

2 TBS olive oil
1/2 cup Onions chopped
12 oz. Mushrooms,chopped
7 cloves Garlic
1/4 tsp Pepper, black
3 TBS Cilantro
3/4 cup Bread crumbs, dry
4 TBS Cilantro
1/2 cup Milk
2 TBS olive oil
3/4 tsp pepper
3 fillets of salmon cut into 3 oz pieces
Directions
Saute onion in hot oil in a skillet over med-high heat.
Stir in mushrooms, garlic, salt, and pepper; cover and cook 3 minutes. Uncover and cook, stirring occasionally, until liquid is evaporated.
Stir in cilantro. Transfer mixture to plate and let it cool.
Place one-sixth of filling in the center of each salmon fillet; fold edges to center to completely cover filling.
Bake at 350 for 25 mins or until the salmon is cooked to your liking.
