Introduction

Ingredients

    1 small sweet potato (spiralized)
    1 cup of baby kale
    4 bella mushrooms
    1/4 small onion
    2 poached eggs
    1/2 slice of American cheese
    1/8 sliced avocado
    Dash of cayenne pepper

Tips

I made with 2 eggs, but 1 egg would have been plenty :)


Directions

Spiralizer 1 small sweet potato
saute 4 mushrooms, 1/4 of small onion in 1/2 tbsp of coconut oil, once cooked toss in baby kale.
add in spiralized sweet potatoes and cook until desired tenderness.
Top with poached eggs, cheese and avocado.
