Ingredients

    Brown rice 2 cups cooked
    Yellow Sweet Corn, frozen, 1 cup
    Beans, black, 1.5 cup (drain if using canned)
    Salsa, 1 cup
    Diced Tomatoes, No Salt Added, 1 cup
    Low fat sour cream
    2% Shredded Cheddar Cheese, .75 cup

Tips

Add other veggies to taste--diced zucchini, green or red pepper. Also chilis or spicy salsa if you'd like it a bit spicier.


Directions

Mix all ingredients except cheese and a casserole dish. Sprinkle cheese on top. Bake uncovered for 30 minutes.
