Ingredients

    6 mushrooms sliced
    1 bag Aldi's little salad bar flat leaf spinach
    2 wedges Happy Farms Garlic & Herb cheese
    5 egg whites
    1 tsp olive oil
    Salt and Pepper to taste.

Tips

(Tip: if you have a non-stick skillet with a plastic handle, wrap foil around the handle to prevent it from melting under the broiler.)

You can mix this recipe up with any veggies you choose. I love it with peppers and onions too.


Directions

Lightly oil a 13" skillet. Saute mushrooms and spinach. Add cheese and allow it to "melt" into the spinach and mushrooms. Beat 5 egg whites and pour over the spinach, mushroom, and cheese mixture. Once bottom is set, place pan in the oven under broiler. Cook until top is set. Serves 2-4 depending on appetite.
