Ingredients

4 cups carrots, grated
2 cups apples, grated
1/2 cup raisins
1/2 cup walnuts, chopped
1 tsp sea salt
1 tsp black pepper
1 tbsp apple cider vinegar
1 tbsp avocado oil
Tips
This keeps well in the refrigerator for several days.
Grating the apples will usually leave some juice, especially when done with a food processor. Strain the grated apples (and carrots) lightly in a mesh colander before mixing in the other ingredients. Save the juice, it is delicious!
Directions
Grate carrots and apples with grater or food processor to get the right amount (4 cups of carrots and 2 cups of apples).
Chop walnuts by hand or with a food processor.
Combine all ingredients in a large bowl and serve.
