Ingredients

    1 Cup Greek Yogurt or 2 containers of your favorite Greek yogurt
    7 Tbsp Quinoa Flour (whole-wheat flour works too)
    1 Tbsp Splenda
    1 Tsp Baking Soda
    1/2 Tsp Salt
    1 Cup Eggbeaters (2 large eggs)
    1/2 Tsp Vanilla Extract
    1 Tbsp Cinnamon

Directions

First, warm the griddle or skillet on medium-low heat. Then mix the ingredients, adding the eggs last. The mix is going to be lumpy but that just adds to the yummy texture!

Pour 1/4 cup of the mix onto the warmed griddle or skillet. Don't panic, the pancakes will expand as they cook.

Flip the pancake after 3-4 minutes (when the bubbles close to the center are popping, you know they're ready to be flipped).

Enjoy with a tsp of light syrup and some light butter or throw some extra berries on top(not included in the calorie count).
