Ingredients

    Cut Leaf Spinach - Frozen or fresh 8 oz
    Frozen chopped Seasoning Vegetables - 1/4 cup
    Mushrooms, chopped canned or fresh, 1 cup
    Butter 2 Tbs
    Eggs - 5
    salt and pepper to taste

Tips

Add other vegetables like tomatoes or zucchini when on hand.


Directions

Microwave spinach for 2 minutes to thaw. Saute vegetables in butter. Add whipped eggs. Salt and pepper to taste. Cook until eggs are set.
