Introduction

This is a slimmed down version of one of my favorite recipes, and it is very simple to make. This is a slimmed down version of one of my favorite recipes, and it is very simple to make.

Ingredients

    16 oz. pkg. cooked shrimp with no tail
    12 oz. pkg. Imitation Crab, flake style
    2 can Healthy Choice Cream of Mushroom Soup
    1 small can Green Enchilada Sauce
    1 med onion chopped
    20-6" Mission X-tra Thin Yello Corn Tortillas
    20 slices Sargento Reduced Fat 2% Medium Cheddar Slices

Directions

Heat oven to 350 and spray a large round baking pan. Cut up shrimp and flake imitation crab into small pieces, Chop onion and saute in a large skillet. Add shrimp, imitation crab, both cans of soup and the green enchilada sauce and heat until it's warmed through. Put a little bit of the sauce in the bottom of the pan. (helps keep tortillas on the bottom softer) Layer 5 tortillas on the bottom, they will overlap. Layer 1/4 of the seafood and sauce mix, then layer 5 slices of the cheddar cheese. Repeat layers 3 more times. Put in the oven for 45 minutes until it's hot and bubbly. Serve with a dollop of lite sour cream and chopped green onion if you want to dress it up a bit.
