Ingredients

    Extra Virgin Olive Oil- 2 Tbsp.
    1.5 lbs. boneless, skinless chicken breast
    Swanson Chicken broth (2 32 oz. boxes) (8 cups)
    Almond milk 1/3 C.
    Bisquick mix- 1 1/8 C.
    Parsley flakes 3 Tbsp.
    Salt 1/2 Tbsp.
    Pepper, 1/2 Tbsp.

    *any other seasonings to chicken for taste

Tips

Best served hot but this recipe does reheat well!


Directions

cut/shred chicken into half dollar sized pieces
Heat oil in large skillet or wok on med-high heat
Add chicken to skillet, heating until just turning brown
**In the meantime, pour both cartons of broth into large pot and heat on med-high heat**
After chicken is done, remove from heat (leave in pan) and set aside.
Combine milk and bisquick in small-medium bowl (it will be sticky and doughy)
Once the broth begins to boil, drop spoonfuls of the dough into broth.
Add chicken, salt, pepper, and parsley
Reduce heat to med. and continue cooking until "dumplings" are fluffy and broth begins to thicken (7-10 minutes)

Serving Size: Makes 6 1.5 C. Bowls
