Introduction

Ingredients

    2 skinless boneless chicken breasts cut in bite sized pieces
    garlic to taste
    grated fresh ginger root to taste
    4 cups fresh mushrooms sliced
    2 cups zucchini 1/2 inch slices
    2 cups parsnips 1/2 inch slices
    1 tbsp. Oyster Sauce
    2 tbsp. Teriyaki Sauce

Directions

Brown chicken in 1T olive oil with a little garlic and ginger. Set aside.
In the same pan brown mushrooms with a little more olive oil, garlic, and ginger.
Add leeks, zucchini, and parsnips and stir fry just until tender but still firm.
Drizzle oyster sauce and teriyaki sauce as you stir
Add Bok Choy just until wilted
