Ingredients

15 oz canned no salt peas, or thawed frozen, or cooked fresh peas, reserving cooking liquid
2 Tbsp chopped onion (or more to taste)
1/4 cup butter
1/4 cup flour
black pepper to taste
salt to taste
1/8 tsp ground sage
2 cups water
1 can (12 ounces) regular or fat free evaporated milk
crumbled bacon for garnish if desired
Directions
Drain canned peas. Reserve 1/3 cup liquid or use water. Puree peas and liquid in blender until smooth or to desired consistency.
Melt butter. Cook onion in butter until softened. Add flour, salt, pepper, and sage to butter. Cook for a few minutes to remove floury taste. Slowly add 2 cups of water. Bring to boil and cook until thickened, about two minutes. Stir inpureed peas and evaporated milk. Heat through. Serve with bacon garnish if desired.
Serving Size: Makes 5 cup sized servings.
