Ingredients

3 cups all-purpose flour, unbleached
1/2 cup granulated sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1/2 tbsp salted butter
1 cup milk or buttermilk
3/4 cup currants or raisins
1 tbsp orange peel
Directions
Preheat oven to 425 ºF. Combine flour, sugar, baking powder, baking soda & sale in mixing bowl. Stir well with fork to mix and aerate. Cut the butter into the flour mixture until mixture looks like fresh breadcrumbs. Add milk, currants & orange rind. Mix only until the dry ingredients are moistened.
Gather dough into a ball and press so it holds together. Turn dough out onto lightly floured surface. Knead lightly 12 times. Pat dough into a circle 1/2 inch thick. Cut dough into circles using drinking glass or biscuit cutter. Place scone 1 inch apart on lightly greased baking sheet. Bake for about 12 minutes, or until tops are browned. Serve hot.
Makes 15, 2 1/2 inch scones.
