Ingredients

    Ingredients:

    Flour, white, 1 cup
    Baking Powder, 2 tsp
    Granulated Sugar, .25 cup
    Cinnamon, ground, .50 tsp
    Nutmeg, ground, .50 tsp
    Bran Flakes,( any brand) 2 cup
    Apple Sauce, 8 oz
    Raisins, 1 small box (1.5 oz)
    Banana, fresh, 1 small (6" to 6-7/8" long)
    Skim Milk, .33 cup (remove)
    Egg white, large, 2 serving
    Butter, salted, 4 tbsp
    butter spray

Directions

In medium bowl, combine flour, baking powder, sugar, cinnamon, and nutmeg. set aside.
in large bowl, combine cereal, milk and bananas, let stand 5 mins till cereal is softened.
in small bowl beat whites till foamy, then add to cereal mixture. mix well, then add dry ingredients in with cereal. stir till all is blended well. scoop mixture into sprayed muffin tins.

Bake 400 degrees for 20-25 mins or till lightly browned.

Serving Size: makes 18 muffins one serving each
