Ingredients

    11-12 Eggs
    16 oz cottage cheese
    3 oz mozzarella cheese
    1 oz cheddar cheese
    can of Ro Tel diced tomatoes and green chiles
    2 Tbsp melted butter
    2 Tbsp flour - less if not using tomatoes

    Feel free to add whatever veggies you want. Quick and easy meal and kids love it.

Directions

whisk eggs together. drain tomatoes well. add all ingredients, mixing well. spray 9x9 pan and cook at 350 for 40-50 minutes
