Ingredients

    1 med cooking onion, sliced
    1 tbsp extra virgin olive oil
    3 apples
    500g fresh broccoli, chopped
    500g frozen peas
    700 ml stock/water
    Pepper, to taste

Tips

A little chilli would also suit this soup


Directions

1. Sweat onion in olive oil for 5 minutes.
2. Add all the other ingredients and simmer for 20 mins
3. Allow to cool, blend, and season to taste
