Ingredients

    1/4 c Egg substitute, liquid (Egg Beaters)
    1/2 tsp Baking Soda
    2 tsp Cinnamon, ground
    1/2 c Motts Organic Unsweetened Applesauce
    1 tsp Baking Powder
    1 c Quaker Oats 100% Natural Whole Grain oatmeal
    10 tsp Splenda Brown Sugar Blend,
    2 Medium Apples, fresh
    2/3 c Bob’s Red Mill Whey Protein
    3/4 c Milk, nonfat
    1 c Whole Wheat Flour

Directions

Combine oats and milk and let side for 60 minutes. Chop apples into small pieces. Mix flour, whey protein, baking powder, baking soda, sugar and cinnamon in medium sized bowl. Set aside. Add egg beaters, apples, and apple sauce to oat mixture and combine with flour mixture. Spoon into greased muffin tins, filling 2/3 full. Sprinkle some cinnamon and sugar on top of muffins. Bake 16-18 minutes at 400 degrees F. Makes 12 hearty muffins. Delicious served warm! :)
