Introduction
These cupcakes are not perfect (no lower carb food tends to be the same as the high carb food) but they help me deal with cravings. My oven is sometimes underheating so you might want to test that the time is right for your oven and peek in on the cupcakes at about 13 or 14 mins or so. Ingredients

2 egg whites
4 egg yolks
1/2 stick softened unsalted butter
7 tblsp Splenda
1 teasp vanilla extract
2 tblsp sour cream
3 tblsp oat flour
pinch of salt
1 teasp lemon peel
2/3 teasp baking powder
1/2 cup almond flour
6 tbslp soy protein powder
Tips
If you want a better texture use xylitol for half of the Splenda, if you have it. The cupcakes could be iced with buttercream icing with cocoa and stevia for example.
Directions
Beat the egg whites stiff, maybe with some cream of tartar. Use a foodprocessor to turn dry oats into oat flour and you can also do that with almond meal. The ingredients might be different in the nutritional calculator because I was trying to keep the carb counts.
Keep the sour cream separate next to the egg whites. Beat the rest with a mixer until the mix is thick and creamy. Put 6 cupcake liners in a cupcake pan or butter 6 cavities in a cupcake pan. Pour 1/6 of the mixture in each cavity or liner. Bake at 350 F for 15 to 20 minutes.
