Ingredients

    7 c.vegetable broth
    3 potatoes, cut like fries
    3 carrots, sliced long
    1/2 cabbage, chopped
    2 large beets, cut like fries
    2 medium onions, sliced semi circles
    3 large garlic cloves, minced
    1/2 t. black pepper
    1/2 can tomato paste
    2 bay leaves
    salt to taste
    vinegar, at the end to taste
    3 T. olive oil

Directions

Saute onion, garlic, bay leaves, pepper, carrots and beets with olive oil, tomato paste and a little broth to help cook. Cook potatoes and cabbage in broth about 15 minutes. Add beet mixture and continue to simmer till all vegetables are cooked. Add salt to taste.
