Introduction

Ingredients

    Earthly Choice Wheat berries, dry uncooked, 0.5 cup
    Apple, Gala (medium), 1
    *Grey Poupon Dijon Mustard, 2Tbs
    Honey, 1 tsp
    Celery, raw, .5 cup, diced
    Cranberries, dried, sweetened (craisins), 2 Tbs
    Yogurt Plain Greek Yogurt, non-fat, .33 cup
    Lemon juice, 1 tbsp
    Walnuts, 0.125 cup, chopped

Tips

This works well topping a green salad in lieu of veggies. Nice as a side salad to a meal.


Directions

In a medium pot add 1 1/2 cups water and wheat berries. Bring to a boil and simmer covered approximately 15 minutes or until soft but chewy. Drain excess water and allow to cool.

In a medium bowl combine rest of ingredients, Stir well and chill.

Serving Size: makes 6 1/2 cup servings (sides)
