Ingredients

    1.5 c spelt flour (whole grain)
    1 tsp baking powder
    1/2 tsp baking soda

    1 egg
    1 tsp honey
    2 tbsp olive oil
    1 1/4 c milk (any kind you like. water works too)

Tips

I have used water, coconut milk, whole milk, almond milk, yogurt with water or any combination thereof. All have worked just fine.


Directions

Add dry ingredients and mix. Add wet ingredients and mix. I don't measure the wet ingredients but rather add until I like the consistency of the batter. Some people prefer thicker batter and others thinner. Customize to your hearts content!

Pour onto heated griddle and cook until edges dry and bubble appear on top. Flip and cook until golden brown (or however dark you like your pancakes).
