Ingredients

    1 lb ground turkey
    1/2 cup finely chopped cauliflower
    1/2 cup finely grated carrots
    1 cup finely chopped mushrooms
    1/2 cup finely chopped onion
    1/2 cup finely chopped bell pepper
    2 large egg white
    1/4 cup cilantro chopped
    2 tsp Worcestershire sauce
    1 tsp salt
    2 tsp black pepper
    1/4 tsp cayenne pepper

Tips

change the texture? only cook the carrots and cauliflower. course chop mushroom, onions, and peppers. add to warm vegetables after you remove them from heat.

substitute 1/2 dryed shitakes, reconstituted and 1/2 portabella mushrooms coarsely chopped for a deeper meater flavor.

kick it up. substitute 1/2 the green pepper for 1 fined chopped seeded jalapeno. Really brave leave the seeds in.


Directions

add carrots and onions to pan and cook to softened. about 5-7 minutes. add 1 tsp of salt and pepper, add mushrooms, peppers, and cauliflower to pan and cook until cauliflower softens. remove vegetables from pan and let cool. mix turkey, cilantro, remaining pepper, cayenne pepper, and Worcestershire sauce and egg whites in bowl. add cooled vegetables and mix and cook in hot non stick pan oiled with cooking spray
