Ingredients

    1/4 Cup Shredded Coconut, no sugar added
    1/4 Cup Crushed Pineapple
    1/4 Cup Chia Seeds
    Pinch of Salt
    3/4 Cup Coconut Milk
    1/2 Cup Pineapple Juice
    Splash of Vanilla

Directions

Place coconut, pineapple, seeds, salt, and coconut milk in a container with a tight fitting lid. Stir well, add pineapple juice and vanilla and stir again. Refrigerate for at least 2 hours before serving.

Serving Size: Makes 4 approximately 1/2-cup serviings
