Introduction

Ingredients

    1/4 cup Guava Juice (or orange juice)
    4 dried Apricots, diced
    1 cup plain, non-fat Greek Yogurt
    1/2 Grapefruit, sectioned
    1 4-oz cup Mandarin Oranges Fruit in Juice Cup strained
    1/4 cup Bran Flakes Cereal
    2 TBS Pistachios

Directions

Combine guava juice and dried apricots in a small bowl and cover. Microwave until apricots are tender and juice reduces to a light syrup.

Divide yogurt between 2 bowls. Spoon the apricot-guava mixture over the center.
Arrange grapefruit, mandarin oranges, cereal and pistachios in neat piles or row around the compote.

You could sprinkle with coconut.
