Ingredients
-
6 tbsp liquid egg whites
1 tbsp oat bran
1/2 scoop whey vanilla protein powder (with 130 calories and at least 30 g protein per scoop)
1/4 cup coconut flour
1 tsp vanilla extract
1 tsp coconut extract (optional but is included in nutrional info)
Tips
Get creative with your toppings! We love to use greek yogurt in place of maple syrup and add fresh fruit and nuts/seeds. If you'd like top with pure maple syrup, low-fat whipped cream, granola, or even a drizzle of raw/organic honey. Chocolate syrup, sprinkles, and cool whip would be a kid-friendly option.
Directions
Heat a skillet sprayed with nonstick spray. Beat egg whites until frothy and add remaining ingredients. Combine well and pour 1/2 of the batter into the prepared skillet to form a large pancake. Repeat with remaining batter top at will and serve!
