Ingredients

    brown rice
    1 cup water
    1 can veggie stock
    assorted veggies and seasoning:
    garlic powder 1 tsp
    black pepper 1 tsp
    1 tsp ground cayanne pepper or more to taste
    ortega fajita seasoning 3 tsp
    fresh cilantro 3 Tbs
    juice from one lime

    1 cup carrots chopped
    1 yellow bell pepper chopped
    1 cup yellow onion chopped
    1 cup sweet corn
    1 can black beans drained and rinsed
    1 can fire roasted chopped tomatoes

Tips

makes 7 servings a little over 1 cup


Directions

cook brown rice according to directions in a saucepan using your 1 cup water and your can of veggie broth as liquid. meanwhile chop onions, pepper, and carrots and saute in a skillet. when rice is done, mix everything together and simmer for a few additional minutes.
