Ingredients

3 oz boneless and skinless chicken breast; cut into bite size chunks, 1 slice turkey bacon; chopped, 1/8 cup water, 1 cup fresh green beans, 1.35 tsp ranch dressing dry mix, 1/4 cup low-fat 1% cottage cheese and 1/2 cup Smart Taste elbow macaroni.
Tips
I pureed 2 cups cottage cheese to 1 packet dry ranch seasoning mix, and keep it on hand. Great dip for veggies and crackers! You can substitute green beans for broccoli, peas and carrots, spinach etc. You can also add grated Parmesan cheese (or any shredded cheese) at the end when you serve it, not included in nutritional information. Don't add any salt to this recipe, especially if you are using marinated chicken. Cook the chicken and turkey bacon ahead of time to save cooking time.
Directions
In a small food processor, blend the cottage cheese and dry ranch mix until smooth and dense (dip-like consistency), and let stand in fridge for 10 minutes.
In medium saucepan, boil water and cook pasta according to directions, drain and set aside.
In a non-stick pan, cook turkey bacon. Remove bacon, set aside and add chicken. Cook chicken, tossing the pieces every minute or so until cooked through.
In medium saucepan, on medium heat, combine water and green beans, heat to a light boil THEN add cottage cheese puree, turkey bacon, and chicken. Mix together until puree is warm and melted. Turn off heat and add cooked macaroni, toss to coat pasta. For thinner sauce, add water by tablespoon to get desired thinness. Plate it immediately, cool 3 minutes, and enjoy.
