Ingredients


    2 heads romaine lettuce - about 6 cups, sliced
    1 english cucumber, large dices
    1.5 cups cherry tomatoes
    1 large red or green bell pepper, cut bite sized
    1 cup crumbles feta cheese
    1 can pitted black olives, drained (or use greek olives if you have)
    2 Tbsp olive oil
    1 Tbsp fresh or jarred lemon juice
    2 Tbsp red wine vinegar
    1/2 tsp salt
    1/2 tsp fresh ground pepper
    1 tsp dried oregano (or Tbsp minced fresh oregano)
    2 cloves garlic, finely minced (must be fresh, not dried)

Directions

Put all vegetables, cheese and olives in a bowl, mix together dressing ingredients. Add dressing to salad just before serving.

Serving Size: make 6 generous servings
