Ingredients

1 C skim milk
1-1/2 C Fiber One Bran cereal crushed into flour
1/2 C unsweetened applesauce
1 egg
2/3 C stevia
1/2 t vanilla extract
1 C whole wheat flour
1 s baking powder
1/2 t salt
1 C fresh or thawed frozen blueberries
Tips
These muffins are great paired with a GREEK 100 yogurt! A great snack for under 200 calories!
Directions
Preheat oven to 375 degrees.
Grease muffin cup liners.
Grind bran cereal into flour using a high-speed blender
Mix bran flour with milk and let sit for 10 minutes.
In large bowl, mix applesauce, egg, stevia and vanilla.
Beat in bran and milk mixture.
In another bowl, sift together flour, baking powder and salt.
Mix dry ingredients with wet mixture.
Fold in blueberries.
Generously scoop into muffin liners.
Bake for 15-20 minutes.
Stir dry and sifted mixture into bran
Serving Size: Makes a dozen muffins
