Ingredients

1/2 cup (heaping) rolled oats, ground into flour [[can use pre-ground oat flour, it will just have more calories]]
a dash salt
2 tbsp Truvia
1/4 cup egg beaters
1/4 cup liquid egg whites
1/4 cup unsweetened almond milk
1 tsp smart balance light margarine, or other light buttery spread (can use real butter, for more fat/calories)
optional toppings: applesauce, powdered sugar
Directions
Get out 2 bowls and a skillet.
In one bowl, beat the egg whites with a whisk until well frothy.
In the second bowl, whisk together egg beaters, flour, Truvia, salt and milk.
Fold egg whites into the flour mixture.
Heat the skillet to medium and melt the tsp of buttery spread, coating the entire pan.
Pour in all the batter at once.
Let cook until mostly set; bubbles will form at the top and the sides will be dry. Then, start to flip.
Don't worry if it falls apart, because it's supposed to! Just make sure that each piece gets flipped as it breaks apart, so that it can continue to cook on the opposite side.
Scrape the bottom of the skillet as you go to get any batter that may stick.
When done cooking and golden brown, dump the whole beautiful mess onto a plate and, if desired, serve with applesauce//sprinkle with powdered sugar!
