Introduction

Quinoa is bland tasting to me, and I thought a can of soup might perk it up. The quinoa absorbed the spicyness of this soup though. Next time I might also add some chopped fresh Jalapeno to it. Ingredients

    8.8oz dry quinoa
    10.5 oz can of Cream of Jalapeno soup (condensed)
    10.5 oz water (one can of water)

Tips

Rinse the quinoa in a fine mesh sieve under running water. If you don't, the quinoa may taste bitter. It has some kind of natural stuff on the surface. It will taste better after cooking if you rinse before you cook it.

I like this put on top of steamed broccoli.


Directions

Put soup and water into sauce pan, add quinoa. Bring to a boil. Cover the pan and turn heat to a slow simmer. Check in 15 minutes, might need up to 5 extra minutes. Quinoa will become translucent when it's done. Don't over cook or it will turn to pasty mush.

Serving Size: Makes 7-8 half cup servings
