Ingredients

    2 Large Eggs
    1 Thomas' Light Multigrain Muffin Toasted
    2 Chef Meg's Low Sodium Breakfast Sausage Patties
    1/4 Cup Kraft Mexican Cheese
    1/2 Cup 505 Mild southwestern Green Chile Sauce

Tips

You can use spicier green chile or even make your own. You can also use egg beaters instead of eggs to reduce fat and cholesterol.


Directions

In medium skillet cook sausage until thoroughly done. Slice sausages length-wise to cover surface of half muffin.

Poach eggs using cooking spray. If you have egg rings, you can spray cooking spray into egg rings in medium skillet and cook until yolk is desired consistency.

While eggs are cooking, toast muffin, and warm green chile. Plate the muffin, putting one sausage patty on each. place cooked egg on top. Cover each with 1/4 cup of warmed green chile. Top each with 1/8 cup of cheese and serve.
