Ingredients

MUFFIN INGREDIENTS
1.5 cups quick-cooking oats
1 1/4 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon salt
1 cup applesauce unsweetened
1/2 cup fat-free milk
1 egg white
TOPPING INGREDIENTS
1/4 cup quick-cooking oats
1 tablespoon brown sugar
1/8 teaspoon ground cinnamon
1 tablespoon butter
Tips
I'm lactose sensitive so I used Unsweetened Vanilla Almond Milk and I didn't have quick-cooking oats on hand so I used regular oats, the muffins still turned out fine.
Be careful not to overcook and store in airtight container and in the fridge.
Directions
1. Combine quick oats (I didn't have any on hand so I used regular oats), flour, brown sugar, baking powder, baking soda, cinnamon & salt in a large bowl/sift together well.
2. Combine applesauce, milk ( I used Silk Unsweetened Vanilla Almond Milk), canola oil and egg white; mix until combined well then stir into the dry ingredients until just moistened.
3. Fill paper-line muffin tins 3/4 full
4. Combine topping ingredients and sprinkle over unbaked muffins.
5. Bake at 400 degrees 16-18 minutes or until toothpick comes out clean.
6. Coll 10 mins before removing to wire rack.
